EFE\/ Chema Moya<\/figcaption><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"has-vivid-red-color has-text-color has-link-color has-medium-font-size wp-elements-23db7e95974579b190d8bc7ea9a6cef6\"><strong>Agencia EFE<\/strong><\/p>\n\n\n\n<p>Madrid (EFE).- Madrid Fusi\u00f3n 2025, el gran escaparate de la gastronom\u00eda, los cocineros, procesos y productos, ha arrancado este lunes con un homenaje a los grandes chefs de los a\u00f1os 90 y una mirada a los retos de la Inteligencia Artificial (IA).<\/p>\n\n\n\n<p>Ser\u00e1n m\u00e1s de 250 ponentes de m\u00e1s de 25 nacionalidades para abordar la nueva gastronom\u00eda y la producci\u00f3n, elaboraci\u00f3n y consumo de alimentos en seis espacios diferentes y recuperar sabores y tradiciones culinarias.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-angel-leon-presenta-burbujas-de-aire-de-ma\">\u00c1ngel Le\u00f3n presenta burbujas de aire de mar<\/h2>\n\n\n\n<p>El chef \u00c1ngel Le\u00f3n, del restaurante Aponiente del Puerto de Santa Mar\u00eda, C\u00e1diz, ha logrado aislar una \u00abpart\u00edcula de aire\u00bb que orienta a los p\u00e1jaros en altamar y que servir\u00e1 a sus clientes encapsulada en una burbuja flotante.<\/p>\n\n\n\n<p>Le\u00f3n ha compartido las novedades de su restaurante para 2025 en el arranque de Madrid Fusi\u00f3n.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/i0.wp.com\/efe.com\/wp-content\/uploads\/2025\/01\/madridfusion-1.jpg?resize=900%2C598&amp;ssl=1\" alt=\"El Chef Ferran Adri\u00e0 (i)\" class=\"wp-image-1628631\"\/><figcaption class=\"wp-element-caption\">El Chef Ferran Adri\u00e0 (i) y su hermano Albert (d), este lunes en Madrid Fusi\u00f3n 2025. EFE\/ Chema Moya<\/figcaption><\/figure>\n\n\n\n<p>En su intervenci\u00f3n con la que ha inaugurado la gran cita gastron\u00f3mica, Le\u00f3n ha explicado que, en los meses de diciembre a marzo investiga y reflexiona con su equipo, y que llega a Madrid Fusi\u00f3n con ganas de compartir \u201clocamente\u201d sus ideas, que no sabe si se acabar\u00e1n sirviendo en el restaurante o no.<\/p>\n\n\n\n<p>As\u00ed, ha explicado que, este a\u00f1o, ha logrado aislar una part\u00edcula que usan los p\u00e1jaros para saber d\u00f3nde est\u00e1n los peces y \u201cesa part\u00edcula se la vamos a dar a los clientes\u201d, dicen mientras crea una burbuja flotante, que libera los aromas atrapados al contacto con la boca.<\/p>\n\n\n\n<p>Adem\u00e1s, ha subrayado que, en 2025 Aponiente va a estar, por fin, en la propia marisma gracias a que ha logrado la concesi\u00f3n junto a Ecologistas en Acci\u00f3n, lo que \u201cnos da un poco de v\u00e9rtigo y miedo\u201d, ha reconocido.<\/p>\n\n\n\n<p>\u201cVa a ser un sue\u00f1o gestionar la marisma y que los clientes coman camarones vivos, chocos, ostiones, todo lo que hay all\u00ed\u201d ha asegurado, antes de detallar otras novedades como un plato que cambia de color al momento de servir el agua, o toda un amplia colecci\u00f3n de vegetales marinos como zanahorias, col, tomate.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/i0.wp.com\/efe.com\/wp-content\/uploads\/2025\/01\/madrid-fusion-2.jpg?resize=900%2C600&amp;ssl=1\" alt=\"El Chef Albert Raurich\" class=\"wp-image-1628634\"\/><figcaption class=\"wp-element-caption\">El Chef Albert Raurich, este lunes en Madrid Fusi\u00f3n 2025. edici\u00f3n de este a\u00f1o, rendir\u00e1 homenaje a los grandes chefs que asombraron al mundo hace 30 a\u00f1os con su cocina de vanguardia, su libertad creativa y su atrevimiento, como Ferran Adri\u00e0, Mart\u00edn Berasategui, Juan Mari Arzak, Pedro Subijana, Andoni Luis Aduriz, Dani Garc\u00eda, Quique Dacosta, Joan Roca o Carme Ruscalleda.<\/p>\n\n\n\n<p>Todo ello animado por eventos y cert\u00e1menes como la segunda edici\u00f3n de Madrid Fusi\u00f3n Dreams, que explorar\u00e1 la potencialidad de la IA en el futuro de la alimentaci\u00f3n, o el The Wine Edition Wines from Spain, que ser\u00e1 epicentro de maridajes innovadores y tendencias enol\u00f3gicas.<\/p>\n\n\n\n<p>Adem\u00e1s, a lo largo de los tres d\u00edas se celebrar\u00e1n competiciones para celebrar la mejor
