Y dejamos que Arcadi nos mande&#8230;<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-full is-style-default\"><img fetchpriority=\"high\" decoding=\"async\" width=\"746\" height=\"567\" src=\"https:\/\/losperiodistas.com.mx\/portal\/wp-content\/uploads\/2022\/07\/16571033427158.jpg\" alt=\"\" class=\"wp-image-31632\" srcset=\"https:\/\/losperiodistas.com.mx\/portal\/wp-content\/uploads\/2022\/07\/16571033427158.jpg 746w, https:\/\/losperiodistas.com.mx\/portal\/wp-content\/uploads\/2022\/07\/16571033427158-300x228.jpg 300w\" sizes=\"(max-width: 746px) 100vw, 746px\" \/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"has-vivid-cyan-blue-color has-text-color has-medium-font-size\">EMILIA LANDALUCE \/ CR\u00d3NICAS DEPAGANINI \/ GRAN MADRID<\/p>\n\n\n\n<p>Nos cita<strong>&nbsp;Arcadi a Cayetana<\/strong>&nbsp;y a m\u00ed en el restaurante mexicano sito en&nbsp;<em><strong>The Madrid Edition<\/strong><\/em><strong>,&nbsp;<\/strong>el nuevo hotel que acaba de abrir en Plaza de las Descalzas, 2.&nbsp;<strong>Jer\u00f3nimo<\/strong>&nbsp;es responsabilidad de<strong>&nbsp;Enrique Olivera, chef de Pujol<\/strong>, uno de los dos restaurantes que el&nbsp;cocinero mexicano tiene entre los 50 mejores restaurantes del mundo, as\u00ed que \u00edbamos con muchas expectativas.<\/p>\n\n\n\n<p>La guerra cultural empieza pronto. \u00bfC\u00f3mo dicen?\u00bfPujol o&nbsp;<em>Puyol<\/em>?, pregunta Arcadi. Y cuando el desconcertado camarero nos responde con acento de&nbsp;<strong>Anna Gabriel<\/strong>&nbsp;ya empezamos a re\u00edr. Mientras Cayetana y yo pedimos dos margaritas (vulgares, nada que ver con&nbsp;<strong>esas espumas como las de Ferran Adri\u00e1<\/strong>&nbsp;que sirven en el establecimiento de M\u00e9xico DF), Arcadi pide una botella de&nbsp;<strong>La Raspa<\/strong>, uno de esos vino blancos que los andaluces ya bordan y que, como el fino, van bien con todo precisamente porque van m\u00e1s all\u00e1. Como&nbsp;<strong>nos encanta que Arcadi nos mande<\/strong>, le dejamos a \u00e9l que decida. Pedimos<strong>&nbsp;los chicharrones de cerdo<\/strong>&nbsp;(tacos de torreznos), unas tostadas de bogavante que val\u00edan un pico; una raci\u00f3n de&nbsp;<strong>Sikil Pak<\/strong>&nbsp;(una especie de verduras con salsa romescu) y los&nbsp;<strong>calamares a la veracruzana<\/strong>&nbsp;que ni fu ni fa (elaborados con tomates, aceitunas, alcaparras fritas y guindilla). Arcadi entonces dice que para acabar le gustar\u00eda ese plato,&nbsp;<strong>cochinita pibil&nbsp;<\/strong>(cerdo ib\u00e9rico, achiote, xnipec, salsa de habanero), que parece tan simp\u00e1tico. La malicia gana a la molicie ambiental, a la \u00f1o\u00f1er\u00eda imperante.&nbsp;<strong>\u00bfQu\u00e9 dices, Arcadi?<\/strong>&nbsp;\u00abQue las cochinitas son siempre simp\u00e1ticas\u00bb. Y nos morimos de risa porque ya me hab\u00eda dado el titular de esta cr\u00f3nica. Y as\u00ed se qued\u00f3 la comanda, aunque posteriormente pidi\u00f3 otra botella de tinto de cuyo nombre no puedo acordarme. Aunque para finiquitarla pedimos un plato de quesos.<\/p>\n\n\n\n<p>Empiezan a llegar las cosas. Los chicharrones parecen de cualquier verbena a las dos de la ma\u00f1ana. (Los de las seis son otra cosa). \u00abLos de&nbsp;<strong>Salino<\/strong>&nbsp;o&nbsp;<strong>Verdejo<\/strong>, est\u00e1n mejor\u00bb dice Cayetana. Y yo le digo que tiene raz\u00f3n, \u00abcomo siempre\u00bb. Las tostadas, el platillo m\u00e1s costoso &#8211;<strong>bogavante&nbsp;<\/strong>aderezado con cebollino fresco- est\u00e1 agradable, pero nada rese\u00f1able. Como el resto de lo que pedimos. Las verduras (el famoso Sikil Pak) era una composici\u00f3n tan fallida en textura como en gusto. Lo \u00fanico rese\u00f1able, como preve\u00eda Arcadi, fueron las simp\u00e1ticas cochinitas.<\/p>\n\n\n\n<p>La cena nos cost\u00f3<strong>\u00a0120 euros por persona.<\/strong>\u00a0Un tanto excesivo porque no pedimos nada complicado o caro. Ni siquiera\u00a0<strong>el chulet\u00f3n<\/strong>\u00a0de 90 euros que nos recomendaron. Quiz\u00e1s nos deber\u00edamos haber tomado algunos\u00a0<strong>mezcales<\/strong>\u00a0para anestesiarnos de la vida y de que las cochinitas son lo \u00fanico que nunca falla. Habr\u00e1 que volver a Jer\u00f3nimo en unos meses.
