{"id":21207,"date":"2022-02-10T04:18:21","date_gmt":"2022-02-10T10:18:21","guid":{"rendered":"http:\/\/losperiodistas.com.mx\/portal\/?p=21207"},"modified":"2022-02-10T04:18:23","modified_gmt":"2022-02-10T10:18:23","slug":"mexicanos-estigmatizan-leguminosas-se-reduce-ingesta-de-frijol-la-campina","status":"publish","type":"post","link":"https:\/\/losperiodistas.com.mx\/portal\/mexicanos-estigmatizan-leguminosas-se-reduce-ingesta-de-frijol-la-campina\/","title":{"rendered":"Mexicanos estigmatizan leguminosas; se reduce ingesta de frijol | La Campi\u00f1a"},"content":{"rendered":"\n<p style=\"font-size:18px\"><em>Si se combinan con la prote\u00edna de cereales se obtiene casi el mismo valor nutrimental de la carne<\/em><\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"680\" height=\"400\" src=\"https:\/\/losperiodistas.com.mx\/portal\/wp-content\/uploads\/2022\/02\/frijol.jpeg\" alt=\"\" class=\"wp-image-21208\" srcset=\"https:\/\/losperiodistas.com.mx\/portal\/wp-content\/uploads\/2022\/02\/frijol.jpeg 680w, https:\/\/losperiodistas.com.mx\/portal\/wp-content\/uploads\/2022\/02\/frijol-300x176.jpeg 300w\" sizes=\"(max-width: 680px) 100vw, 680px\" \/><figcaption>Especial <\/figcaption><\/figure><\/div>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"has-vivid-cyan-blue-color has-text-color has-medium-font-size\">LA CAMPI\u00d1A<\/p>\n\n\n\n<p><strong>M\u00c9XICO.-<\/strong>&nbsp;El consumo per c\u00e1pita de frijol en M\u00e9xico disminuy\u00f3 en las \u00faltimas d\u00e9cadas, debido a que est\u00e1 estigmatizado al considerarlo prote\u00edna de dieta de pobres y se prefiere consumir m\u00e1s alimentos procesados, advierten las especialistas de la UNAM, Amanda G\u00e1lvez Mariscal y Elvira Sandoval Bosch.<\/p>\n\n\n\n<p>Mientras en 1980 la ingesta por persona al a\u00f1o era de 16 kilogramos, para 2021 fue de nueve, de acuerdo con el Panorama Agroalimentario 2021 de la Secretar\u00eda de Agricultura y Desarrollo Rural.<\/p>\n\n\n\n<p>Al frijol lo menospreciamos al considerarlos \u2018comida de pobres\u2019 y estamos cometiendo un grav\u00edsimo error; son fuente de prote\u00edna, destaca G\u00e1lvez Mariscal, acad\u00e9mica del Posgrado en Ciencias Bioqu\u00edmicas.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"604\" height=\"404\" src=\"https:\/\/losperiodistas.com.mx\/portal\/wp-content\/uploads\/2022\/02\/Captura-de-Pantalla-2022-02-10-a-las-4.16.37.png\" alt=\"\" class=\"wp-image-21209\" srcset=\"https:\/\/losperiodistas.com.mx\/portal\/wp-content\/uploads\/2022\/02\/Captura-de-Pantalla-2022-02-10-a-las-4.16.37.png 604w, https:\/\/losperiodistas.com.mx\/portal\/wp-content\/uploads\/2022\/02\/Captura-de-Pantalla-2022-02-10-a-las-4.16.37-300x201.png 300w\" sizes=\"(max-width: 604px) 100vw, 604px\" \/><\/figure>\n\n\n\n<p>Comerlos, al igual que las tortillas, es ingerir prote\u00edna proveniente de leguminosas que no tienen colesterol, baja en grasa y que al combinar con la prote\u00edna de cereales se obtiene pr\u00e1cticamente el mismo valor nutrimental de la carne, expone.<\/p>\n\n\n\n<p>Con ella coincide la coordinadora de la Licenciatura en Ciencia de la Nutrici\u00f3n Humana, de la Facultad de Medicina, Elvira Sandoval Bosch quien explica que junto con las lentejas, habas y garbanzos est\u00e1n estigmatizados debido a que son productos econ\u00f3micos. \u201cPensamos que si no somos pobres, no tenemos por qu\u00e9 estar consumiendo estos alimentos, lo que es muy falso\u201d.<\/p>\n\n\n\n<p>Las leguminosas son claves para una alimentaci\u00f3n rica, variada y nutritiva y el frijol es el principal representante de este tipo de alimentos en la dieta de los mexicanos, destaca Sandoval Bosch.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Si combino cereales con leguminosas tengo una prote\u00edna de tan buena calidad como la de origen animal. Lo mejor es que me voy a ahorrar las grasas saturadas\u201d<\/p><\/blockquote>\n\n\n\n<p><strong>SIN PRETEXTOS PARA COMERLOS<\/strong><\/p>\n\n\n\n<p>Sandoval Bosch explica que hay quienes no consumen frijoles u otras semillas porque les generan distensi\u00f3n abdominal, lo cual puede evitarse remoj\u00e1ndolas un d\u00eda antes de su cocci\u00f3n, cocerlas con especias como el comino o con hierbas como el hinojo o el cilantro. Si se es muy sensible a este alimento, se pueden cocer dos ocasiones, cada una con agua nueva.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Que los prueben de diferentes maneras: si no les gustan los frijoles pintos, que opten por los negros; si no les gustan los frijoles, que elijan las lentejas, son intercambiables; si prefieren el garbanzo en consom\u00e9, adelante.
